Selecting a wine-merchant is like finding the right restaurant, you want more than the food and a wine list, it must be welcoming, with an atmosphere you like; not so easy to achieve but the type of place we strive to be.


The screaming buy this weekend is the Borderland Bush Telegraph red, and The Borderland Flocking Galloots. The Galloots gives the game away as it is 100% from the Adelaide Hills yet costs you $6.58.

While lunching recently at Fino, Seppeltsfield, in the Barossa with brother Richard the discussion turned to what makes an excellent restaurant. A feeling about belonging in the place is a must which makes us both wary of celebrity chefs particularly those who turn from the kitchen to empire building. For example, somehow, I have a packet of Multix ‘Jamies Lunch’ Sandwich bags in the pantry, a style of self-aggrandisement that has me avoiding any Jamie Oliver eating places or cook books.

In my long innings in the trade I noted that a wine selling well meant it had to be tinkered with by the producer. This repositioning shifted perception and was picked up by customers as it often showed it was no longer being made for them.
Here is an example. In the late 1990s Hardys released a McLaren Vale Shiraz under the historic Tintara label which dated back to the 1870s. It over-delivered and at $10.99 was a bargain. We were able to transfer our excitement to customers and a few months later one chain of shops in Sydney was selling 70% of the production.

Against our best advice the price was pushed up, next a brand built around the region of McLaren Vale was expanded to Coonawarra; for us, a huge no-no. This was noted by customers, our enthusiasm waned and I’m not sure if Tintara is still made.

All of these experiences were to later lead to the creation of Glug where we want to capture that sense of place, a belonging, like a welcoming restaurateur.
